Recipe of Kashmiri Quewah at Café Ambroisie –Koramangala, Bangalore
Ingredients:
1 tsp green tea
1 pinch cinnamon powder
1/4th tsp cardamom powder
1 cardamom
2” stick of cinnamon
1 big almond
1 tsp sugar /honey
7-8 strands saffron
350 ml water
Method:
Soak saffron in hot water for a
few minutes. Grind almond to rough pieces with a rolling pin, keep aside. Rub
saffron to release flavor and color.Grind
cardamom to coarse pieces.
Boil water in a pan and add cardamom
powder and cinnamon powder. When it boils well add green tea , turn off the
heat and close the vessel.
In a tea mug add ground almond, cardamom
and saffron mix. Strain green tea to this mug. Garnish with cinnamon stick and cardamom
peel.
Serve with sugar or honey.
