South Indian Filter Coffee at Café Ambroisie –Koramangala, Bangalore






Filter coffee is prepared with coffee decoction and steaming hot milk. The coffee powder with or without chicory is brewed with hot water to make decoction and mixed with hot milk. The decoction has to be prepared fresh for each use as the stored decoction turns sour .
There are several methods of preparing filter coffee, viz.,
1.       Electric coffee maker
2.        Traditional coffee filter – hot water is poured over coffee powder and the decoction drips down
3.       Percolator- water is poured in the bottom container, coffee powder in the middle and heated up, the decoction collects in the upper container.
The steel device shown in the picture is the percolator. Café Ambroisie uses percolators to make strong decoction for their filter coffee preparations. Filter coffee is best enjoyed in metal tumblers. Café Ambroisie serves filter coffee in brass tumbler and davara, as shown in the picture.
